Would it be a good idea to have an Entertainment section (for all discussion pertaining to films, television, music, etc) and maybe even a non-RS gaming section? :o

It would make sense. Perhaps sub-forums under General Discussion? I don't think they'd get as many threads as the other main forums, although they're significant topics.

Yeah, subforum under Gen. Disc. would work IMO.
