There's a courage spell. That does what you're looking for.
If you absolutely don't want your dog to die, you can wield courage on one hand and a healing spell on the other. It'd also be better if a follower, a dremora, the ancient dragonborn, Durnehviir, and Durnehviir's three skeletal minions were fighting with that dog.

That's normal. They don't say "black" on my game either. But test them out, you'll see that the "grand" souls from humans are more effective than all the rest.
